More details The 1985 Cheval Blanc has always been one of the picks of the vintage for what was a fecund decade for the Saint-Émilion. This example shows similarly to previous bottles. It has a fragrant bouquet with sandalwood, clove and chestnut, maybe here even a touch of brettanomyces? It is only slight. The palate is beautifully balanced with melted tannin. The Cabernet Franc in full flight – hints of bell pepper and cedar, a surfeit of fruit. Maybe it lacks the precision of more recent vintages but how can you resist its charm. Impossible! Présentation du lot Château Ausone 1er Grand Cru Classé A La cuvée Les jeunes vins de Château Ausone arborent une robe claire et des tannins assez durs, mais l'amateur éclairé ne s'y méprendra pas ces grands vins, taillés pour une garde exceptionnelle, s'assouplissent après 15 ou 20 ans de cave et dévoilent un bouquet aromatique inégalé - épices, café moka, pain grillé, minéraux, etc. Le domaine Château Ausone Ne dit-on pas d'un vin qu'il ressemble toujours à son propriétaire ? Cette idée n'a jamais été aussi vraie qu'à Ausone, où l'excellence de la production reflète l'intarissable souci d'exigence d'Alain Vauthier, co-directeur du domaine pendant de nombreuses années et unique propriétaire depuis 1997. L'origine du nom du cru n'a jamais pu être vérifiée mais tout porte à croire qu'il honore la mémoire du poète latin Ausone, ancien habitant de la région et grand amateur de vin. Seul Premier Cru Classé bordelais à l'échelle humaine 7 ha, Ausone bénéficie, sur certaines parcelles, de la présence salutaire d'une roche sous-jacente poreuse, en contact étroit avec les racines superficielles de la vigne, qui absorbe l'eau en excès et la restitue lors des étés caniculaires. C'est ainsi qu'en 1956, Ausone est sorti indemne du gel qui a détruit 80% du vignoble girondin, une survie qui en fait un des rares vignobles bordelais à posséder un encépagement vieux de plus d'un demi-siècle. Après des années de qualité moyenne, dues à une certaine confusion quant à la direction du cru, la prise de fonction d'Alain Vauthier en 1974 signe le retour à un niveau d'excellence.
